Mexican seven-layer dip

PreP: 20 minutes Chill: overnight
1 16-ounce can refried beans
½ cup salsa
½ of a 14-ounce package refrigerated
guacamole
1 8-ounce carton sour cream
1 cup shredded cheddar or taco cheese
( 4 ounces)
¼ cup sliced pitted ripe olives
¼ cup sliced green onions ( 2)
1 cup chopped, seeded tomatoes
( 2 medium)
8 cups tortilla chips or assorted crackers
1. The day before: In a medium bowl
combine refried beans and salsa. Spread
bean mixture in a 2-quart rectangular baking
dish with a tight-fitting lid. Carefully spread
guacamole and sour cream over bean mixture.
Top with cheese, olives, and green onions.
Cover and chill overnight.
2. Tailgate day: Sprinkle dip with tomatoes.
Cover dish with lid and tote dip in an insulated
cooler with ice packs. Serve dip with tortilla
chips. Makes 16 servings.

Spinach-dill dip
PreP: 20 minutes Chill: overnight
1 8-ounce package cream cheese, softened
1 8-ounce carton sour cream
2 tablespoons finely chopped green onion
2 tablespoons snipped fresh dill or
2 teaspoons dried dill
½ teaspoon seasoned salt or salt
½ of a 10-ounce package frozen chopped
spinach, thawed and squeezed dry
Milk (optional)
Assorted dippers, such as vegetables,
crackers, and/or chips
1. The day before: In a medium bowl
combine cream cheese, sour cream, green
onion, dill, and seasoned salt. Beat with an
electric mixer on low speed until fluffy. Stir in
spinach. Transfer to a storage container; cover
and chill overnight.
2. Tailgate day: If dip has thickened
during chilling, stir in enough milk (1 to
2 tablespoons) to make mixture dipping
consistency. Tote dip and, if using, vegetable
dippers in an insulated cooler with ice packs.
Serve dip with vegetables, crackers, and/or
chips. Makes about 2 cups.
